While Cinco de Mayo commemorates Mexico’s victory over the French at the Battle of Puebla in 1862, it has taken on a different meaning in the United States, evolving into a popular celebration of Mexican food and culture. In Mexico, the holiday is marked with military parades and historical reenactments. In the United States, its rise in popularity was largely driven by marketing campaigns – especially from beer and liquor brands, turning it into a festive occasion centered around tacos, margaritas (I vote you make big batch margaritas for a crowd!), and vibrant gatherings.

Meat

Authentic Birria Taco Recipe
This recipe is consistently one of my most popular recipes. The meat is slowly simmered in a chile broth until tender. It’s served with a simple onion cilantro salsa topping and with consomme for dipping.
