Lillet is a noted French wine-based aperitif, which comes in three different flavors: blanc, rosé and rouge. While it can be served alone and chilled as a dinner wine, I love adding it to cocktails. I’m a fan of any alcoholic beverage that is also beloved by Ian Flemming’s James Bond!

Lavender Simple Syrup

To make the lavender syrup in this cocktail I add lavender flowers to homemade simple syrup. The name speaks for itself – simple syrup is made by bringing equal parts sugar and water to a boil and the result adds a sweet and flowery touch to the drink.

  • Lillet blanc – This particular recipe uses Lillet blanc. It is a crisp fortified wine that contains flowery notes as well as aromas of candied oranges, honey and pine from the combined macerated fruit and wine. It’s lighter than most wine and is the perfect addition to this light cocktail.
  • Lemon juice – Fresh squeezed lemon juice brightens up this recipe and rounds out the flavors.
  • Champagne – I top this cocktail off with just enough champagne to add a little fizz.

How to Make Lavender Lemon Fizz

For the lavender simple syrup:

  • Make the simple syrup. In a small saucepan over medium heat, whisk together sugar with 1 cup of water until the sugar has dissolved. Stir in the lavender then bring the mixture to a boil then lower heat to medium-low and simmer until thick and syrupy, about 15 minutes.
  • Strain the syrup. Remove from heat and use a fine mesh strainer to strain the lavender flowers from the simple syrup. Let cool completely.
  • Let cool and store. The simple syrup can be made ahead of time and stored, refrigerated, in an airtight container for up to a week.

For the sparkling lavender cocktail:

  1. Add ingredients to cocktail shaker. Fill a cocktail shaker with ice. Add the Lillet blanc, lemon juice and ½ ounce of the lavender simple syrup and shake vigorously.
  2. Strain cocktail. Strain the cocktail with a cocktail shaker into a chilled 5-ounce coupe glass.
  3. Top with champagne. Top off with champagne. Garnish with sprigs of lavender and serve immediately.
