  • Olive oil – The popcorn is popped in extra-virgin olive oil which adds a rich, distinct flavor.
  • Rosemary – I quickly sauté a bit of dried rosemary in the oil before adding the popcorn kernels to infuse the oil with rosemary flavor. Fresh rosemary can also be used.
  • Garlic powder – A sprinkle of garlic powder over the popcorn adds a concentrated yet mellow garlic flavor that complements the cheese and nutritional yeast.

Don’t walk away! Stovetop popcorn goes from perfectly popped to burnt in a matter of seconds. Once the popping slows to about 2 seconds between pops, pull it off the heat. Crack the lid immediately to let steam escape so the popcorn remains crispy.

How to Make Cheesy Garlic Popcorn (Step-by-Step)

Step 1: Heat oil and infuse with flavor.
Heat a large heavy bottom pot over medium-high heat, add the olive oil and heat through. Add the rosemary and swirl it in the pan quickly. Add the popcorn kernels and cover the pot.
Step 2: Pop popcorn.
Shake the pan and continue shaking the pan every minute or so that by the end of the cooking process, all the kernels hit the heat evenly and pop, about 3 to 5 minutes total. Listen for the kernels to slow popping then remove from heat.
Step 3: Add toppings.
Add half the popcorn to a large bowl. Evenly pour half the melted butter and garlic powder over the top season with salt. Top with half the nutritional yeast then add the remaining popcorn. Drizzle with the remaining butter and add garlic, salt and nutritional yeast. Sprinkle with the cheese and serve immedaitely.

Making this garlic parmesan popcorn in the microwave is just as easy and comes together in just a few minutes. I recommend using a silicone or glass microwave popcorn maker. It’s reusable, easy to clean and gives more control than a store-bought microwave bag. Here’s how to do it:

  1. Add kernels to a microwave-safe popcorn maker with the olive oil.
  2. Microwave on high for 2 minutes, then continue in 30-second intervals.
  3. Stop when popping slows to about 2 seconds between pops.
  4. Transfer to a large bowl and season according to recipe below while still warm.
