Honey Almond Granola

during summer I buy a big container of Greek yogurt at the beginning of the week and eat a scoop of it topped with a little honey, fruit and granola for a filling, yet healthy breakfast.

I tend to get into habits with my breakfast choices. Most importantly I like something that’s easy to put together for the time period between when I wake up and before I sit down at my computer to answer emails and get to work. During warm summer months I buy a big container of Greek yogurt at the beginning of the week and eat a scoop of it topped with a little honey, fruit and granola for a filling, yet healthy breakfast.

Key Ingredients in This Recipe

  • Oats – When choosing your oats for granola recipes I use old-fashioned also called rolled oats, not quick or instant oats.
  • Honey – Make sure the only ingredient on the back is honey! There should be no other additives (such as corn syrup or sugar syrup). Look for raw, unfiltered honey to act as a natural sweetener in this recipe.
  • Brown sugar – I use dark brown sugar in this recipe which refers to the amount of molasses in the sugar. Dark brown sugar contains about 6.5% molasses (in comparison to 3.5% in light brown sugar). Be sure to tightly pack the brown sugar in a measuring cup to get an accurate measurement.
  • Almonds – I use whole raw almonds though slivered almonds also work if you prefer a more unified granola texture.

How to Make Honey Almond Granola

  1. Heat oven. Preheat the oven to 250ºF (130ºC).
  2. Mix the granola. In a large bowl stir together the oats, almonds and brown sugar until combined. In a small bowl whisk together the honey, oil, cinnamon, cardamom and sea salt until combined. Mix the wet ingredients into the dry until the oats and almonds are evenly coated in the honey mixture.
  3. Spread on a baking sheet. Evenly spread the mixture in an even layer on a parchment paper-lined baking sheet. Bake until golden brown, about 1 hour, stirring halfway through.
  4. Let the granola cool. Let cool then store in an airtight container for up to a month. Serve the granola with Greek yogurt and fruit or as a snack by itself.

Tips and Tricks for This Recipe

Swaps and Substitutions

While you can simply follow the recipe for a great granola, try adding these ingredients for different twists:

  • The almonds can be swapped for another nut like pecans or walnuts in this recipe.
  • A generous pour of vanilla can add more flavor.
  • Try adding seeds like pepitas (pumpkin seeds) or sunflower seeds for more texture.
  • Dried fruit like goji berries, cranberries, raisins or blueberries add texture and a natural sweet flavor.
  • Toasted coconut flakes give the granola a more tropical twist.
  • Chocolate chips can be added but wait until the granola is completely cooled.
Serving suggestions for granola
  • I like serving this granola over yogurt or with milk on cereal for a lighter breakfast.
  • Simply divide the granola into small bags for an easy snack throughout the day.
  • It also makes a great gift. Add to mason jars and tie with a bow for a simple hostess gift.
Why is my granola not crunchy?

Keep an eye on your oven temperature! If the oven temperature is too high then the sugars may burn before the moisture is removed and the granola becomes crunchy. Ovens can be calibrated wrong and can be up to 50ºF off. I recommend buying an oven thermometer like this one here for an accurate reading.

The granola will also come out of the oven chewy and will harden as it cools. The sugars need a chance to harden!
