It’s always good to have a recipe for an easy side dish up your sleeve. These honey roasted carrots are great as a side to accompany chicken and other roasts – you can even pop them in the oven so they cook at the same time. They’re tender and the honey adds just the right amount of sweet to the recipe.

Key Ingredients in This Recipe
- Carrots – Look for carrots that are all about the same size so that they cook evenly. I skip peeling the carrots and scrub them instead. I find using smaller carrots with trimmed tops to be the most aesthetically pleasing for this side dish though you can substitute baby carrots or roughly chopped large carrots as well.
- Honey – Make sure the only ingredient on the back is honey! There should be no other additives (such as corn syrup or sugar syrup). Look for raw, unfiltered honey. Tossing the carrots in the honey before roasting intensifies the caramelizing process.

How to Make Honey Glazed Carrots
- Prepare the carrots. Preheat oven to 425ºF (220ºC). Toss the carrots in olive oil until evenly coated then toss with the honey.
- Arrange on a baking sheet. Spread in a single layer on an aluminum foil-lined baking sheet.
- Roast. Season with salt and pepper and roast until tender and golden brown, about 30 minutes.
