Add the feta, Greek yogurt, olive oil, lemon zest, lemon juice, garlic and thyme to the bowl of a food processor fitted with the blade attachment or a blender and blend until smooth.
Spoon the dip into a bowl and drizzle with additional olive oil and additional lemon zest (optional).
Serve with pita chips or veggies.

Notes
For the smoothest texture, use room-temperature feta. Cold feta tends to stay crumbly, while softened feta blends into a perfectly creamy, cloud-like dip.
