Preheat oven to 400ºF (200ºC). Slice pita bread into 6 to 8 triangles. Split each piece of the pita bread in half so that it is thinner.
Arrange the pita on a baking sheet in a single layer. Lightly spray with the canola oil cooking spray and season with salt.
Bake, flipping them half way through cooking, until golden brown and crisp, about 8 minutes. Let cool and serve with your favorite dip. Store in an airtight container.
