Tossing the carrots in the honey before roasting intensifies the caramelizing. Look for carrots that are all about the same size so that they cook evenly.
Preheat oven to 425ºF (220ºC). Toss the carrots in olive oil until evenly coated then toss with the honey. Spread in a single layer on an aluminum foil-lined baking sheet.
Season with salt and pepper and roast until tender and golden brown, about 30 minutes.
