Honey Glazed Carrots

Tossing the carrots in the honey before roasting intensifies the caramelizing. Look for carrots that are all about the same size so that they cook evenly.

  • pounds tri-color carrots
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper


  • Preheat oven to 425ºF (220ºC). Toss the carrots in olive oil until evenly coated then toss with the honey. Spread in a single layer on an aluminum foil-lined baking sheet.
  • Season with salt and pepper and roast until tender and golden brown, about 30 minutes.
