Bacon, Egg & Cheese Biscuit with Sriracha Honey

This particular sandwich combines flakey southern-style biscuits with melted cheddar cheese, a fried egg, applewood smoked bacon and sriracha honey for a hearty breakfast that might just send you into a food coma.

Ingredients

  • 1 pound thick-cut applewood smoked bacon, cut in half width-wise
  • 4 large buttermilk biscuits, halved (get the recipe here)
  • 4 slices sharp cheddar cheese
  • ¼ cup honey
  • 1 tablespoon sriracha
  • 4 fried eggs
  • 1 tablespoon chopped chives

Instructions

  • Preheat oven to 400ºF (200ºC).
  • Lay the strips of bacon in a single even layer on a parchment paper-lined baking sheet. Bake until the bacon is crispy, about 15 to 20 minutes. Remove to a paper towel-lined plate.
  • Preheat the oven to broil. Arrange the biscuit halves cut side up on a baking sheet. Place a slice of cheese on each of the bottom pieces of biscuit. Broil until the cheese has melted and the biscuits are golden brown, about 1 to 2 minutes.
  • In a small bowl stir together the honey and sriracha until completely combined.
  • Lay a fried egg on the top of each biscuit bottom and sprinkle with chives. Divide the bacon among the biscuits and top with the sriracha honey. Drizzle sriracha honey on the top half of the biscuits and close the sandwiches.
  • Serve immediately.
