Rosemary Kumquat Gin Fizz
I took a cocktail class with a friend a few years ago and one thing I learned from it is how good kumquats are!

- 4 kumquats, halved
- 1 tablespoon fresh rosemary
- 1 teaspoon cane sugar
- 2 ounces gin
- Club soda, as needed
- Rosemary sprig
Add the kumquats, rosemary and sugar to a cocktail shaker.
Muddle until the juices release from the citrus and the sugar dissolves.
Add the gin and ice then close the shaker and shake vigorously.
Pour into a cocktail glass filled with ice and top with club soda and a sprig of rosemary.
