Creamy Pastina Recipe

This rich and creamy Italian comfort food is made with a few simple ingredients and comes together in under 10 minutes. It’s a favorite sick day cure (bonus points if it’s made with homemade chicken stock).

Ingredients

  • 2 cups chicken stock
  • 1 cup pastina pasta (6 ounces)
  • 2 tablespoons unsalted butter
  • 1 egg beaten
  • ½ cup packed freshly grated Parmesan cheese (or ⅓ cup store-bought grated Parmesan), plus additional for serving
  • Kosher salt, as needed
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Bring the chicken stock to a boil in a medium saucepan over medium heat. Add the pastina and cook until the pasta is al dente and most of the stock has been absorbed, about 4 to 5 minutes.
  • Remove the pot from heat and quickly stir in the butter, egg and cheese. Season to taste with salt and pepper.
  • Serve warm in bowls topped with additional freshly grated Parmesan cheese.
