Zhoug Sauce
Zhoug, also spelled zhug, is a Yemini spicy cilantro sauce/ condiment. The vibrant green, cilantro-based hot sauce is used throughout Middle Eastern cuisines (used frequently in Israel and Syria) and sometimes noted as a “green hot sauce”.

1 large bunch cilantro, leaves and stems 3 cloves garlic, smashed 3 medium jalapeños, seeds and membranes removed 1 teaspoon ground roasted coriander 1 teaspoon crushed red pepper flakes 1 teaspoon ground cumin ½ teaspoon ground cardamom ½ cup canola oil Kosher salt, as needed Freshly ground black pepper, as needed
Add the cilantro, garlic, jalapeno, coriander, red pepper, cumin and cardamom to the bowl of a food processor fitted with a blade attachment.
Pulse until coarsely chopped. With the food processor running, slowly add the olive oil in a steady stream until the mixture is emulsified.
Season to taste with salt and pepper. Use or store refrigerated in an airtight container until ready to use, up to 1 week.
