Avocado-Tomatillo Salsa Verde

Not only is the bright green color of this salsa visually appealing, but the bright and creamy flavors are the perfect accompaniment for smoky grilled meats, tacos or when served with chips.

Ingredients

  • 1 medium avocado, peeled and pitted
  • 5 medium tomatillos, husked, rinsed and quartered
  • 1 medium jalapeño, roughly chopped
  • ½ medium white onion
  • 2 garlic cloves, sliced
  • ½ cup packed cilantro leaves
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon kosher salt

Instructions

  • Add the avocado, tomatillos, jalapeño, onion, garlic, cilantro and lime juice to a blender or food processor.
  • Purée until the mixture is smooth. Season with salt.
  • Use or store refrigerated in an airtight container for up to 1 week.
