Heat oven to 300ºF & coat an 8” x 8” pan with butter. Line with parchment paper & butter once more. Add eggs to a mixing bowl & whisk until eggs fall like ribbons. Add half and half, chives & season with salt. Pour egg mixture into greased pan.

Set the pan with eggs into a larger 9”x11” baking pan. Boil water & pour into the larger bottom pan then carefully transfer to oven. Bake until eggs are just set (~30 min).

Use towels / oven mitts to transfer the dish out of the water bath & onto a cooling rack. Let cool slightly (~5 min).

Carefully run a knife around the edges of the pan and lift out of the pan onto a cutting board. Cut the eggs into 4 equal squares.

Divide sausage into 4 portions & shape just larger than buns. Heat a cast iron pan over medium-high heat. Add sausage patties & press down with a metal spatula so they are thin & smashed. Cook until golden brown (~2 min). Flip & cook through until browned on the other side (~2 min).

In a small bowl stir together the mayonnaise & harissa until combined.

Turn the oven to broil on high. Top each egg piece with a slice of cheese & transfer to one side of a baking sheet. Arrange the buns on the other side of the baking sheet. Broil until cheese has melted & buns are toasted (~1 min).

Spread harissa mayonnaise on the bottom bun. Top with a sausage patty followed by the egg with the melted cheese. Close each sandwich & serve hot.
