Since things move fast once you start cooking , I recommend chopping onions and garlic ahead of time and measuring out all ingredients
Sauté onion and garlic
Heat a saucepan over medium heat, add the olive oil and heat through. Add butter and melt. Sauté onions until soft, about 6 minutes. Add the garlic and quickly sauté.
Add the tomato paste
Add the tomato paste and stir to combine, letting the paste cook for about 2 minutes, until deep red.
Add the vodka and stir to combine, then let reduce by half.
Add cream and season
Stir in the cream. Season to taste with salt and pepper then add red pepper flakes.
Cook the pasta
Bring a pot of water to a boil; add pasta and cook, until al dente, about 10 min. Drain, reserving 1 cup of the cooking water. Return the pasta to the pot. Add the sauce and stir.
Ladle the pasta into warmed pasta bowls and top with basil and Parmesan cheese. I like to add grilled chicken as well.
